Omelette Sandwich

1/2 tsp - Vegetable Oil2 tbsp - Chopped raw onion1.5 tbsp - Diced jalapeño peppers (can use sliced)2 - Large eggs1 tbsp - Fat free milkSaltPepper1/4 cup - Shredded cheese4 slices - Mrs. Baird's 100% Whole Wheat Bread
Makes 2 sandwiches.
In small bowl or measuring cup, mix the eggs, milk, salt and pepper. Be sure to break the yolks. Set aside.
In a small skillet, pour in oil (enough to coat the bottom). Heat oil, then add onions. Sauté onions until browned. Add jalapeños (if using sliced, then use spatula to cut jalapeños into smaller sections).
Pour in the egg mixture. Stir constantly until eggs are cooked.
Add the cheese. Mix ingredients throughly.
Serve omelette on bread as a sandwich.
