Whole or cut up chickenCollege Inn White Wine & Herbs 99% Fat Free Chicken BrothPackage sliced baby portabello mushroomsPackage frozen artichoke hearts6 Campari tomatoes, dicedOlive OilSeasoning of choiceWhole wheat pasta
Prepare whole or cut up chicken for crock pot. Add desired seasonings and 2 cups of the chicken broth and cook on low. Remove chicken from bone. Strain and reserve broth from crock pot. Discard skin and bones. In a skillet saute' shallots, mushrooms and tomatoes in 2 tablespoons of olive oil. Add thawed artichoke hearts and chicken. Season to taste. Heat through while pasta is cooking. Makes 8 servings.
