Salmon Melt Sandwich

6 ounces canned salmon drained2 tablespoons chopped onion or shallot1 tablespoons low-fat mayonnaise1/2 tablespoon lemon juice1 tablespoon minced flat-leaf parsley1/4 tsp Tabasco sauceFreshly ground pepper to taste2 slices whole-wheat bread, toasted1 tomatoes, sliced1/4 cup reduced fat shredded sharp Cheddar cheese
1. Preheat broiler.
2. Combine salmon, onion, mayonnaise, lemon juice, parsley, hot sauce and pepper in a medium bowl. Spread 1/4 cup of the salmon mixture on each slice of toast; top with tomato slices and 2 tablespoons cheese. Place sandwiches on a baking sheet and broil until the cheese is bubbling and golden brown, 3 to 5 minutes.

GREAT!The brands I used made the calorie count drop too.Wonderful right out of the oven&crisped(broiled AT LEAST 5 minutes in my oven).The salmon mixture tasted way different after broiling and combined with the hot tomatos under cheese.Fresh came to mind when I was eating it.Pleasant suprise. - 9/2/09
