burguhl and eggplant

Ingredients
2 cup burghul {cracked wheat}4 cup eggplant2 cup onion chop1/3 cup leek2 tbsp olive oil 2.5 cup waterany spice you like + salt miss dash you can add 1 cube of magge
Directions
in the midium pot add 2 tbs olive oil,lightly brown onion and leek,cook for 5 minutes,add eggplants and 1 cup of water,simmer for 10 to 15 min.until the eggplants are soft,wash the burguhl and add to the pot with 1.5cup of water,cook for 15 to 20 min.or until the water evaporates and burguhl is tender,you can add more water if desired.bona appetitte
