Spanish rice with beef

1 pound extra lean ground beef1 large can black (or ranch style) beans1 regular can stewed tomatoes (or a cup of mild chunky picante sauce)3 cloves garlic chopped1 medium onion chopped2 or 3 cups brown rice1/2 cup corn1/2 cup peas1/2 cup shredded Monterrey jack cheeseI didn't have them on hand but I would also add a small can of green chili's and a chopped green pepper instead of the peas.
Brown ground beef with chopped onion and garlic, after browned add one can stewed tomatoes with juice, the taco seasoning (approx. 1pkt), the beans, the cooked rice, and the cooked corn and peas. I pre-cook the rice and veggies , it just makes it faster. Cook until heated through, sprinkle cheese on top and let melt or transfer to a glass or oven safe dish and melt under broiler.
