Ingredients
# Grapefruit, fresh, pink and red, California and Arizona, 100 grams (remove)# Pineapple, fresh, 200 grams (remove)# Banana, fresh, 100 grams (remove)# Egg Yolk, 2 large (remove)# Brown Sugar, 20 grams (remove)# Vanilla Bean, 0.5 serving (remove)# Cinnamon Stick, 1 serving (remove)# Ginger Bites Dried, 20 gram (remove)
Directions
Bring milk, vanilla and cinnamon to simmer until reduced to half. Set aside.
Fillet the citruses into clean sections, mix with cubed pineapple and chopped ginger. Arrange in 4 ramekins. Sprinkle each with 1 tsp sugar.

Beat together yolks, sugar, and strained milk, in a deep 4-quart metal bowl with a handheld electric mixer at medium speed or whisk vigorously until combined well.

Set bowl over a 4-quart pot of barely simmering water and beat mixture until tripled in volume, 5 to 6 minutes.

Pour zabaglione over fruits and broil for 3 min.
