Sweet Potato Chips

Ingredients
1.5 Tbsp. Olive Oil (prefer spritzer)2 Sweet PotatoesCinnamon
Directions
Preheat oven to 375. Spray cookie sheet with olive oil spritzer.
Slice sweet potatoes into roughly 1/4" slices. Spread slices on cookie sheet (as you would to bake cookies.) Sprinkle lightly with cinnamon. Spritz tops of potatoes lightly with olive oil.
Bake for 12-15 minutes at 375. Yields 4 servings.

    Definitely needs to be cooked at 400 and sliced a little thinner since it took much longer to cook. We did like the cinnamon, but I think I'll try using butter spray on top next time. - 11/8/10

    Amazing! I sliced them a little thinner and baked them at 400. I also added a little sea salt when they came out of the over. My husband, who swears he hates sweet potatoes, absolutely loved these. So did my 1 & 3 year old picky eaters. A big hit with our family! - 4/9/11

    I turned the oven up, sliced the potato thinner, crinkled foil to cover the cookie sheet, sprayed it with butter spray. Yum!! - 5/13/10

    I like sweet potatoes (or actually, I guess its yams I like) so I was interested in trying this recipe. I think I would have liked them even without the cinnamon, although it did add a nice touch. I will try them again and next time I'll try the 400 degree idea for a crisper chip. - 1/29/10
