Oatmeal Pizza Dough + my toppings from The Best Kept Secrets of Healthy Cooking

1.25 cupls plus 2 TBSP bread flour1/3 cup quick cooking oats1.5 tsp rapid rise yeast1 tsp sugar.25 tsp salt.5 plus 2 TBS skim or lowfat milk or water1 Cup of Tomato Sauce1.5 cups of part skim shredded mozzarella3 cups of fresh spinach
Yields 8 slices (1 slice/serving).
Place .75 cup of the flour and all the oats, yeast, sugar, and salt in a large bowl. Stir to mix well. Heat milk or water until very warm (125 to 130 degrees). Add liquid to flour mixture and stir for one minute. Stir in remaining flour 2 TBS at a time til it forms a soft dough.
Knead dough for 5 minutes until it is a smooth satiny ball. Coat a large bowl with nonstick cooking spray, place dough in the bowl and cover with a clean towel. Let it rise in a warm place for about 35 minutes or until doubled in size.
When dough has risen, punch it down, shape it into a ball, and turn it onlto a lightly floured surface. The dough is now ready for shaping, topping and baking.
Microwave spinach, when wilted remove from microwave and let cool. Top pizza with sauce, spinach, and mozzarella. Bake for 10-12 mintues at 425 degrees or until cheese is melted and the crust is lightly browned.
