Chocolate Bread Pudding Lite

5 slices Whole Wheat Bread1 1/2 cups skim milk1/2 cup egg substitute2 tsps vanilla1/2 cup brown sugar4 Tbsp Cocoa1 Tbsp corn starch1/2 Tbsp cinnamon, or to tasteSplenda Brown sugar blend or other sugar substitute, equivalent to 1/4 cup sugar
Makes 8 servings
1. Preheat oven to 350. Spray 8" square baking pan with cooking spray.
2. Tear and arrange bread to cover bottom of pan, scattering leftover pieces on top.
3. Mix milk, egg substitute and vanilla to blend.
4. Mix brown sugar, cocoa, corn starch, cinnamon, and Splenda separately. Add to milk mixture.
5. Pour mixture over bread foundation.
6. Sprinkle chocolate chips on top.
Bake at 350 for 30 minutes.
