Basic Oat Bran Muffins

Ingredients
1 1/2 cups oat bran1/2 cup raisins1 tablespoon honey1 1/4 cup soy milk. unsweetened2 tablespoons applesauce, unsweetened1/4 cup walnuts, chopped1 tablespoon baking powder2 egg whites
Directions
Spray muffin tin with oil. Combine dry ingredients. Add milk, egg whites and applesauce. Blend together. Bake at 425 degrees for 15-17 minutes. Makes 18 muffins.

    Good but lacks flavor. I used dried cranberries and slivered almonds instead. I sprinkled cinnamon on top but I think I will mix cinnamon in next time. - 3/21/10

    This was a good batter to use as a starting point, but boy does it need flavor! Add spices, dried fruits, etc.or it's just so blah! - 5/26/09

    Very good especially for the amt of calories...just ate one out of the oven and oohhh so good..Dont be alarmed the batter is somewhat moist when first mixed but just let sit a couple of minutes and the oat bran will absorb a lot of the moistures...comes out moist and yummy - 3/10/08
