Protein Muffins

Ingredients
1 cup Instant Oatmeal1 cup Light Soymilk1 egg1/4 Baking Splenda1/2 tsp. Salt2 tsp. Baking Powder1 cup Whey Protein Powder1/4 Flour1/4 Unsweetened Cocoa Powder*PAM for baking
Directions
In one bowl mix the instant oatmeal and soymilk and let it sit for 15 minutes. In another bowl mix all remaining ingredients together. After 15 minutes combined both bowls, and evenly distribute the mixture in 12 muffin/cupcake servings. Do not use a muffin paper, but instead REALLY coat the muffin/cupcake tins well so that the muffins can come out easily. Since this recipe has little fat, it'll be hard without PAM for baking to do this.

    I made these using regular Splenda and 1% milk, and they turn out to be 82 calories per muffin. They are very dense, more like a chewy bread, but they do satisfy a chocolate craving. The baking temp and time is not listed here. I used a 375 degree oven and baked for 7 minutes. - 9/7/09
