Broiled Lamb Chops For 2

Ingredients
8 ozs of lamb chops, 1 inch thick1 tsp. lemon juice1 tsp oregano or tarragon1/2 tsp salt1/4 tsp black pepper1 lemon -- cut in wedges5 sprigs parsely
Directions
Prepare Lamb Chops - Brush one side of each lamb chop with lemon juice and sprinkle with oregano.
Broil the chops 6 to 8 minutes on one side. Season with salt and pepper then turn them over.
Brush the second side with lemon juice and sprinkle with oregano.
Broil for 6 to 8 minutes and then season with salt and pepper.
Place on platter and garnish with lemon wedges and parsley

    I first sprayed the chops with olive oil then drizzled some lemon juice on them. I then did a dry rub with oregano, salt and pepper. They were placed a food saver container then marinated for a few hours. They were grilled per recipe and total yum when they were done. - 7/6/08
