Mung bean ragu

200g mung beans3 cloves garlic4 carrots1 onion100 g kielbasa or other spicy sausage2 chicken stock cubes750 ml waterplus water for soaking beans
soak mung beans in water for 1 hour
meanwhile, finely chop carrots and onion, mince garlic, cut sausage into 1cm thick pieces.
drain beans.
Fry sausage lightly. Add garlic and onion and sauté until golden. Add carrots.
add the water, stock cubes and mung beans.
cover, and let simmer for 45 minutes.
