Tomatoe and onion salad

Ingredients
3 cups of tomatoes chopped1/4 cup of onion chopped 4 Tbs of lemon juice1 Tbs of light olive oil3/4 tst of salt (for taste)1 Tbs cilantro (dried) 1/4 cup fresh
Directions
Finely chop tomatoes and onions.
Add cilantro, lemon juice, olive oil, and salt.
Mix all ingredients together.
Serve w/ any meat and rice dish.

    I changed it up a bit; ripe olives, basil, garlic, mushroom and green peppers...great base to add special items to. For a meal some whole wheat pasta and maybe a cooked lean meat. - 5/5/09
