Split Pea Soup

2 Cups Dried Split Peas (about 1 lbs)2 quarts water1 ham bone ( about 1 cup diced ham)1 cup minced celery1 med onion - finely chopped (about 1/2 cup)1 sprig parsley1/4 tsp pepper
Heat peas and water to boiling, boil gently 2 minutes, Remove from heat, cover and let stand 1 hour
add remaining ingredients. Heat to boiling. reduce heat simmer 2.5 - 3 hours or until peas are very soft.
remove bone, and trim meat from boan, add to soup. If desired thin with milk or water.
serving size approx 1 cup
