light banana muffin tops

Ingredients
1/2 cup white flour1 cup whole wheat flour1/2 cup oat bran1/2 cup white sugar1 tsp baking soda1/4 tsp salt4 mashed overripe bananas2 eggs, beaten1 tsp vanilla extract1/2 cup chopped walnuts (optional)
Directions
1. preheat oven to 350 degrees F
2. mash bananas and mix in beaten eggs and vanilla
3. in a separate bowl, mix flours, oat bran, baking soda, sugar and salt
4. mix banana mixture into dry mix, then add walnuts if desired
5. Spoon onto a cookie sheet 2 inches apart using a 1/4 c. measuring cup
6. Bake 10 minutes, or until light brown

    Great recipe. Substituted egg whites and only used 3 bananas (it's all I had.) still turned out great! So easy to make my 3 year old helped! - 2/3/12

    These are great. My whole family likes them! I didn't have oat bran, so I used my food processor to finely process old fashioned oats, and used that. Also added some flaxseed and some cinnamon. Love these! They are in the rotation. - 10/26/09

    I can't believe they actually came out looking just like muffin tops (best part of a muffin)! Used Splenda instead of sugar. Sprayed Becel Topping Spray ( 0 calories) for serving. Only thing I found is that I used the 1/4 c to measure out, but got 12 muffin tops. Definitely will make again!!! - 9/10/08

    Used splenda-products4the 1st time.Vanilla Activia yogurt&quick rolled oats cuz I didn't have vanilla&bran. +egg whites&spenda-brown-sugar. I was goofing around ... a little drunk. Baked in a toaster oven, real oven is broken. (+dark choco-chips). AWESOME!We'll c when I'm sober but AWESOME!Honestly! - 6/24/08
