Veggie Spaghetti Sauce

Ingredients
4 c Tomato Sauce1/2 c diced celery1 c diced onions3 c chopped zucchini2 c sliced fresh mushrooms1 c diced carrots1 c diced radish1-2 c water
Directions
Put all ingredients into a pot and simmer for 2 - 4 hours. Add spices to personal preference. Makes 16 - 1/2 c servings.
Personal spice favorites include: oregano, basil, thyme, garlic and pepper. Or italian seasoning or garlic pepper seasoning.

Serve with caesar salad and whole wheat pasta.

    Substitute bell pepper for the carrots and the whole dish is cooked in less than half the time. I also added garlic and a sprinkle of scallion. - 3/26/07
