Roasted Tomato Sauce

Ingredients
4lbs red, ripe tomatoes, quartered1 onion, coarsely chopped4 cloves garlic, whole2t salt1t sugar1/2t crushed red pepper flakes1/4 - 1/2c olive oil1/2c chopped, fresh basil
Directions
Preheat oven to 450. Combine all ingredients, except basil, in 9x12 pyrex, toss to coat. Bake for 50 minutes, turning often. Remove from oven and allow to cool. Add basil. You can serve this chunky over whole wheat pasta or put in blender until smooth for a sauce. This is wonderful served over meatloaf. Add a bit of chicken broth or non-fat milk for a wonderful Tomato Basil Soup, top with fresh pesto and parmesan cheese. This freezes beautifully!!
