Fresh Vegetable Salad

Ingredients
4 cups chopped tomato1-1/2 cup chopped cucumber-skin on1 cup choped red bell or yellow pepper1 cup sliced green onions1 cup chopped fresh parsley1/2 cup chopped radishes1/3 cup pitted kalamata olives (make sure not marinated in oil)1/4 cup fresh lemon juice2 tablespoons olive oil2 garlic cloves, minced1/2 teaspoon black pepper1/4 teaspoon salt1 package Saladena Goat Cheese Crumbles
Directions
1.Combine the first 7 ingredients in a large bowl.
2. Combine lemon juice, and next 4 ingredients in a small bowl and stir with a whisk. Pour dressing over salad and toss well. Serve immediately or cover and chill until ready to serve. This actually gets better if you let it sit in the fridge for a couple hours. It is very good!

This yields approximately 7 servings (serving size 1 cup).
