Feta and Spinach Risotto

Ingredients
2 tbsp olive oil1 large onion, chopped3 garlic cloves, minced1.5 cups brown rice (uncooked)3 c. chicken or vegetable broth1/4 c. dry white wine2 10 oz packages spinach1 c tomatoes, chopped1/2 c kalamata olives, chopped1 c crumbled feta cheese
Directions
Heat oil in cooking pot. Add onions and garlic and saute until tender. Add rice and stir. Add broth and wine and bring to boil. Reduce heat and cover. Cook until rice is almost tender. Mix in spinach and cook until all liquid is absorbed. Remove from heat. Mix in tomatoes, cheese, and olives. Season with salt and pepper
