Shrimp Scampi for Garlic Lovers

Ingredients
1 lb. frozen (defrosted) or fresh shrimp5 cloves garlic or to taste1/8 cup olive oil2 tbsp parsley plus more for garnishjuice of 1 lemon plus lemon wedges for servingsalt and pepper to taste (nutrition info has 1 tsp of each)
Directions
Warm olive oil over low heat. Add garlic and saute until golden. Turn heat to medium high. Add shrimp, salt, pepper, and parsley. Turn the shrimp when the bottom side is pink. Cook on second side until pink on the outside and opaque throughout (cut one open to check), about 10 minutes. Then add lemon juice and cook 30 seconds more. Remove from heat and serve right away with more parsley and lemon wedges.

    Make it all the time, I use half the fat and substitute butter (high in fat but worth it in my book) and add a splash of cognac or sherry. A little parsley, pour it over pasta, can throw in bell peppers or baby tomates too! - 5/15/20

    I added 1tbsp of ghee and used 1tbsp of lemon juice and 1tbsp white cooking wine in place of just the lemon juice to make the "sauce" more significant. - 6/5/21

    I love garlic, but that's too much. 1 or 2 CRUSHED garlic cloves is plenty to get the good garlic taste. I also use a mix of olive oil and a little butter, plus a splash of white wine, for better flavor. - 5/15/21
