Buffalo Chicken & Rice Casserole

Ingredients
1 lb. boneless skinless chicken breast3/4 c. uncooked long-grain rice1 c. chopped mushrooms1/4 c. buffalo wing sauce1/2 c. light ranch salad dessing1 c. shredded mozzarella cheese
Directions
1. Cook rice according to package directions.

2. Boil chicke and rinse under cold water to cool. Cut into 1/2-inch cubes.

3. Chop mushrooms. Put mushrooms & cooked chicken & rice in a casserole dish.

4. Mix buffalo wing sauce & ranch dressing in a bowl Pour over mushroom/chicken/rice mixture & mix thoroughly. Sprinkle mozzarella cheese on top. Sprinkle with paprika for garnish.

5. Preheat oven to 350°F. Bake for 15 minutes or until cheese is bubbly & golden.
