Cornmeal Porridge/Creamy Polenta (Microwave)

Ingredients
2 tablespoons cornmeal 1 cup soy milk 1 teaspoon splenda1/4 teaspoon vanillanutmeg
Directions
1. Mix cornmeal and soymilk in large (at least 16 oz) microwaveable bowl
2. Microwave on high for 2 minutes
3. Stir in splenda & vanilla
4. Microwave on high for 2 minutes, stirring after first minute (watch carefully as it might boil over)
5. Sprinkle nutmeg on top

    I substituted the soy milk with Skim Milk and added cinnamon instead of Nutmeg, since that is all I had. Next time I will ensure I have what I need. Otherwise, really good. - 3/14/12
