Sick Soup

Ingredients
4-5 stalks Celery diced4-5 large Carrots diced5 large cloves garlic diced1 large onion dicedOlive OilGinger root - about two inches dicedChicken Breasts - seasoned, saltedChicken Broth Penne Pasta
Directions
Add ¼ cup of olive oil to a big soup pot. Cook on medium-high the onion, ginger, garlic, and celery until soft (about 4 minutes).
Salt and pepper chicken and add whole chicken to pot. Brown all sides.
Cover with 1quart chicken stock and enough water to cover the chicken. Add the carrots and 2 bay leaves.
Bring soup to a boil then turn heat down to simmer. Cook until chicken is done (about 20 minutes).
When chicken is thoroughly cooked, remove the meat from the bones and put back into pot (works just as well with chicken breasts and saves you this step).
Add chopped parsley and cilantro.
Add red pepper flakes if you would like some spice.

The origional recipe does not call for the pasta. A lot of people find the ginger is too strong. I love ginger, but if its too strong for you, add the pasta and it will mellow out the taste of the ginger.

    i make almost the same thing when im sick, but instead of ginger i use cayenne pepper to clear the sinuses, and boy does it work. i also add a small amout of some type of pasta so i dont get too hungry. - 6/6/09
