summer squash casserole (SB)

Ingredients
2lb. summer squash, cut into chunks1 small onion, diced1/2 C FF sour creamsalt & pepper1/2 C RF parmesan cheese
Directions
cook onion & squash in small amount of water for 5-10 minutes (soft)
drain
mash with fork
drain again
add sour cream and mix well
pour into greased casserole. bake 350 for 20 min.
sprinkle w/ parmesan and cook 5 min longer.

serves 5
