Braised Garlic Chicken w/carrots and spinach

3- Bonelss, skinless chicken breasts-diced into cubes1c- chopped onion3- cloves garlic, minced6- carrots julienned1c- chicken broth1- bunch fresh spinach, stems removedcooking spray
Cut chicken breasts into cubes, or bite size chunks, mince garlic, and chop onion. Add onions, garlic and chicken to hot skillet coated w/cooking spray. Brown chicken all around, pull out of pan. Add carrots to skillet. Coat w/garlic and onion, add chicken back to skillet. Reduce heat, cover and cook 15-20 min until chicken is done and carrots are soft. Remove carrots and chicken from pan. Set aside. Add chicken broth to skillet and boil to reduce (2-3 min.) Put liquid mixture into blender.--Caution--liquid is very hot and will cause top of blender to come off. I cover w/towel to keep secure and avoid splattering.
While liquid is blending, put clean, dry, spinach in medium saucepan, cover and cook on medium heat 2-3 min until just starting to wilt.
Place spinach on plate, arrange chicken and carrots on top and pour sauce over.
Very delicious, even my kids eat it. A household favorite for sure!!

I thoroughly enjoyed it - just changed up the cooking a bit. Didn't cook the spinach separately-just steamed it on top of the rest of the food at the end. Also didn't separate the food for the sauce, used the whole can of broth and 1 T. cornstarch and it thickened up just enough. Yummy! - 6/5/07
