* Brown Rice, 1 cup uncooked * Chickpeas (garbanzo beans), 1 cup * Beans, red kidney, 1 cup * Onions, raw, 1 medium (2-1/2" dia) * Roasted Red Peppers, 1/2 cup * Yellow Peppers , 1 pepper, large * Garlic, 3 cloves (remove) * Diced Tomatoes, 3/4 cup * Cayenne Pepper 1/4 tsp * Bay Leaf 1 * Vegetable Stock (or water) 3 cups
saute onion, garlic and yellow pepper. Add stock, bring to boil. Add beans, Spices and rice. Simmer until the rice is cooked. Top with some hot sauce.
