Stuffed Artichokes

Ingredients
4 medium size fresh artichokes1 c. bread crumbs1/2 c. parmesan cheese, grated1 tsp. garlic powder2 tbsp. extra virgin olive oil1 tsp. red pepper flakes
Directions
Cut off bottom stems and 1" from top of artichoke. Trim any remaining tips of leaves with a scissor. Stretch open leaves and remove interior leaves at heart of artichoke until hollowed out in center. Mix all dry ingredients, except for pepper flakes. Stretch open leaves of artichoke and begin drizzling crumb mixture into the openings of the leaves and center of the artichokes. As each one is finished place in a large dutch oven pan with about 1/2" of water coming up the sides of the artichokes. When all artichokes are stuffed with the crumb mixture, drizzle the artichokes in the pan with extra virgin olive oil and sprinkle with the crushed red pepper flakes. Cover pan and place on stove. Cook on medium heat for approximately 25-30 minutes or until tender and thoroughly steamed. Remove from water. Place on platter and enjoy.
