Jack Mackerel Tuscan Noodle Casserole

6 oz (half bag) enriched egg noodles1 can jack mackerel 1/2 medium onion (2-1/2" dia) 3 cloves garlic1 tsp. fennel seed, ground5 leaves fresh or one tsp. dry basilJuice of 1 lemon 2 Tbsp. canned capers 1 1/2 cup (14.5 oz.) diced tomatoes, Italian style1 cup canned artichokes1/2 cup julienned sun dried tomatoes1/2 tsp. black pepper
Cook the egg noodles according to directions. In skillet, add ingredients in order, sauteeing one at a time. Drain jack mackerel and split fillets so you can remove spine and rib cage bones, then break fish into chunks. Pour briny vegetable mixture over noodles and fish and gently toss.

Makes four very generous two cup portions. Serve with grated parmesan cheese, if desired.
