Baked Peach & Blueberry Oatmeal Cereal

Ingredients
3 c.Old fashioned steel cut Oats5 tsp. Splenda brown sugar2 tsp. baking powder1/2 tsp. salt2 egg whites1 egg1 1/4 c. skim milk1/4 c. olive oil1 tsp. vanilla extract15 oz. chopped peaches1 c. blueberries1.2 tsp. nutmeg1 tsp. cinnamon
Directions
makes approx. 12 1-cup servings.
1. In a large bowl, combine the oats, brown sugar, baking powder, nutmeg, cinnamon & salt. Whisk egg whites, egg, milk, oil & vanilla; add to dry ingredients and stir until blended. Let stand for 5 minutes. Stir in peaches & blueberries.
2. Transfer to an 9x9 inch baking dish coated with Pam. Bake, uncovered, at 350 degrees for 35 minutes and a thermometer reads 160 degrees.
