Wheat-Free, Dairy-Free Oat Pancakes

Ingredients

1 egg1 cup soy milk2 tablespoons canola oil~ 2 cups oat flour (made by grinding up regular oatmeal)1 tablespoon honey1 teaspoon baking powder1/2 teaspoon baking soda1/2 teaspoon salt
Beat egg; add remaining ingredients in order listed and beat with rotary beater until smooth. (When adding oat flour, add just enough to make it the right consistency, which is about two cups. It should be thick, but still able to pass through the tines of a fork.)
Grease heated griddle if necessary. To test griddle, sprinkle with a few drops of water. If bubbles skitter around, heat is just right.
Pour batter from the tip of a large spoon or from pitcher onto hot griddle. Turn pancakes as soon as they are puffed and full of bubbles but before bubbles break. Bake other side until golden brown.
Makes about eight 5-inch pancakes.
