5 boneless skinless chicken breasts4 cups water4 cups low fat chicken broth1 cup diced celery1 cup diced carrot1 cup diced onion5 cups flour5 extra large brown eggs1/2 cup of low fat 1% Milk
In large stock pot, bring water and broth to a boil. Add chicken and vegetable allow 2 simmer for 1 hour.
In a small bowl mix milk and eggs. Place flour in a large bowl, slowly add egg mixture until a dough forms. Roll out dough to 1/8 of an inch. Slice into 1 inch pieces.
Remove chicken to a plate. Slowly add dough pieces into broth, stirring constantly to prevent the dough pieces from sticking to each other. Shreed chicken and return to pot. Allow to cook for an aditional hour or until dough is cooked through and broth mixture has thickened.
