Apple Cinnamon Oatmeal Cookies

Ingredients
2 c soy flour2 c soy protein isolate1 c whole wheat pastry flour2 c flaxseed meal1 c shortening3 tbs baking powder3 large eggs1 c splenda1/2 c splenda brown sugar blend3 tbs cinnamon1 tbs nutmeg1 c applesauce
Directions
Mix all dry ingredients, add eggs, shortening, and oil. Blend then start adding water until you get dough. Spoon onto ungreased baking sheet and bake at 425f for about 12 minutes. Makes approx: 4 dozen
