Puyallup Fair Scones (Fisher Scones)

Ingredients
Directions
2 1/2 cups flour2 tsp Baking Powder6 tsp Granulated Sugar1/2 tsp Salt6 tbsp shortening1/2 cup Milk
Sift and measure flour. Add other dry ingredients and restift all together. Work shortning in with fingers or pastry knife.
Add milk and mix.
Turn out onto a floured board, kneeding a little if needed to finish mixing. Divide into 2 equal pieces.
Roll or pat each into a round, and to 3/4 to 1 inch thick.
Cut into wedge shaped pieces like a pie (each round into 4 pieces, totalling 8 scones).
Bake at 450 degrees for 15 minutes on an ungreased baking sheet.
To serve like the do at the Fair, slip open and fill with raspberry jam (not calculated into recipe) and close.

One of the highlights of going to a fair is getting fresh warm Fisher scones. Thanks for a recipe I can make at home from scratch. Besides eating them warm with raspberry jam, I also like to use them for strawberry shortcake (Split a scone, add loads of mashed strawberries and whipped cream....)

OMG thank you SO much for posting this - These and "Earthquake burgers" were the staple for me growing up when we would "do the Puyallup" - definitely one of my all time favorite comfort foods. I wonder if I did a half and half mixture of wheat/white flour if they would turn out ok? - 3/31/10
