Margherita Pizza Omelet

Ingredients
1-2 Eggs (or 3 egg whites) 3/4 cup baby spinach1/2 cup diced tomato1 clove garlic1 cheese string, reduced fatAdditional veggies (optional): chopped bell peppers, mushrooms, black olives.
Directions
In an omelet pan, drizzle a small amount of olive oil into a pan, heat to medium. Toss in garlic and saute. Add veggies of choice. When spinach begins to wilt and other veggies soften, add two beaten eggs on top of the vegetables. Cook omelet style until nearly cooked; top omelet with peeled strings of cheese until they just begin to melt. Fold over omelet and serve immediately with fresh pepper.
