African Chicken in Peanut Sauce

Ingredients
3 chicken breasts, skinless and boneless2 medium onions, chopped2 cloves garlic, minced1 cup peanut butter, reduced-fat1 cup water1/4 tsp red/cayenne pepper1/4 tsp Mrs. Dash Table Blend1/4 tsp black pepper3 tbsp Smart Balance Omega oil1 can (6 oz) tomato pastesalt to taste
Directions
1. In a 4 quart pan, fry chicken in oil until browned on both sides, remove from pot.

2. Remove chicken and saute onions and minced garlic cloves until soft.

3. Add water and tomato paste to the onions and garlic. Stir until well blended, about 5 minutes.

4. Add peanut butter, seasonings to taste, and chicken and simmer for 30 minutes, stirring frequently.

5. Serve over brown rice.

Makes 6 1 cup servings.
