Turkey-Apple salad with raspberry vinaigrette serves 4

Ingredients
2 cups cooked, skinless light meat turkey or chicken, sliced shredded or chopped1medium apple, cored and diced1 cup seedless grapes, sliced in half2 medium stalks celery, chopped1 1/2 tbsp raspberry vinegar2tsp olive oil1/2 tsp ground coriander1/4 tsp table salt1/4 tsp ground black pepper4 cups shredded romaine lettuceIn a large bowl toss together turkey or chicken, apple, grapes and celery.In a small bowl, whisk together vinegar, oil, coriander, salt and pepper. Add dressing to turkey or chicken mixture and toss again to combine. Arrange lettuce on 4 individual plates an top with turkey salad. Yields about 1 1/4 cups of turkey salad and 1 cup of lettuce per serving.
