12 " BaquetteRed Bell pepper ( sliced ) 1/4 cupGreen Bell pepper ( sliced) 1/4 cup1/2 cup cherry tomatoesBroccoli ( chopped) 1/2 cupCaliflower ( chopped) 1/4 cupMushroom ( sliced) 1 cupRed onion ( sliced) 1/2 cupMozzarella Cheese ( Shredded) 1/4 cupminced garlic 2 tsp
Makes 3 - 4" Sandwiches
Slice your mushrooms, onion, red bell pepper, green bell pepper.
Chop your broccoli and cauliflower.
Then in a large saucepan add your mushrooms, onion, red bell pepper, green bell pepper, broccoli, cauliflower,garlic and tomatoes. Cook over low heat until vegetables are all cooked through.
NOTE: Make sure you stir the vegetable's occasionally.
Once vegetable's are all cooked through spread vegetable's evenly over the sliced opened baguette. Then top with the shredded mozzarella cheese and toast under grill until cheese is all melted.
