Frijolemole

Ingredients
Chickpeas (garbanzo beans), 100 grams Oil, 1 tsp Onions, raw, 1 small , choppedGarlic, 1 clove, choppedGreen Chilli Peppers, 0.5 pepper, deseeded & finely choppedLime Juice, 1 tbspTomatoes, 1 medium, chopped smallCreme fraiche reduced fat, 1 tbsp Coriander, fresh, 1 serving, chopped
Directions
Heat oil and saute onion until transparent, add garlic and gently cook for few more minutes.

Rinse and drain chickpeas. then put in a food processor along with the sauted onion and garlic and seasoning. Add lime juice and puree, add a little splash of water if necessary. (Texture should be like that of hummus).

Empty contents into bowl, mix in the tomatoes, chilli, coriander and creme fraiche.

Cover and chill until ready to serve.
