Tomato Rice Salad

Ingredients
Brown Rice,cooked and cooled, 1 cupRed Ripe Tomatoes, 1 cup, dicdSunflower Seeds, without salt, .33 cup, hulledGreen Onions, 2 tbsp choppedOlive Oil, 2 tbspLemon juice, 3 tbspFresh Mint, chopped or 2/3 tsp dry mintSalt, .5 tspPepper, black, 4 dash
Directions
In medium bowl, combine rice, tomato, sunflower seeds, green onions, olive oil, lemon juice, mint, salt and pepper. Gently mix together.
Adjust the seasoning to taste.
