Rhubarb crisp

Ingredients
rhubarb - 4 cupssugar - 1 1/2 cupsflour - 4 tbspquick oatmeal - 1 cupbrown sugar - 1/2 cupbutter - 1/2 cup
Directions
pour rhubarb into 8x8 baking pan
mix sugar with flour, pour over rhubarb
mix oatmeal with brown sugar, cut in butter and sprinkle on top
bake in 350 degree oven 45 to 50 minutes.
serve with frozen vanilla yogurt (not included in calorie counter)

    I really liked this recipe. I did change it up a little. I used 1/2 c of splenda with the 1 c of sugar. I also added a couple tablespoons of chopped walnuts to the oatmeal and sprinkled on some dried cranberries. I may not use all of the butter next time, maybe try 1/4 c instead. Good taste. - 5/23/10

    Yes it would be healthier withless sugar and less butter.
