Cherie's Oat Bran Banana Muffins

Ingredients
1/4 c ground flax seed (meal)2 1/4 c oat bran1 T baking powder1/4 c chopped walnuts1/4 c brown sugar2 over-ripe bananas mashed2 egg whites2 T canola oil1 1/4 c nonfat milk1 tsp vanilla extract
Directions
Yields 15 Muffins
Bake in pre-heated oven set at 425 degrees

Add mashed bananas to dry ingredients.
Mix in wet ingredients.
Spray muffin tins with cooking oil spray.
Fill muffin cup almost full.

1 shredded apple can be added but the nutrition information here does not include the apple.

Bake 15 minutes. Do not over bake.

These muffins taste great with a little fat free cream cheese spread on top.
