Ham & Cheese Frittata

Ingredients
3 oz Lean Ham, chopped2 Tbs Onion, diced2 Tbs Bell Pepper, diced2 large eggs2 large egg whites2 Tbs Skim Milk1/2 cup 2% Kraft Mexican Cheese1/8 tsp Lite Salt1/8 tsp Black Pepper1/8 tsp Garlic & Herb Seasoning
Directions
Spray 8 inch pie plate with Pam. Chop ham,onion and bell pepper and evenly distribute into pie plate. Beat 2 eggs and egg white with skim milk until well blended. Add cheese and seasonings to egg mixture. Evenly pour into
pie plate over the ham and vegetables.
Bake at 375 degrees for 25 minutes or until set in middle and lightly browned.
Cut into 4 wedges for 2 servings.

    Delicious!! I used my mini processor to fine dice the veg. and ham (Honey Ham). Instead of baking, I cooked like an omelet on my NONSTICK griddle. I would have baked it but I waited til last minute to do thinking it was cooked like an omelet. I sauteed the veg & ham for a min before adding rest. - 6/4/09

    I used bacon bits for the ham, tomato instead of bell pepper 'cause I didn't have any and egg substitute for the eggs, egg whites and milk and added crushed red pepper, garlic and a salt free season mix instead of the lite salt. It was GREAT and Rob even liked it!! Will do again I'm sure!! - 4/23/09
