1.5 Tbsp Olive Oil1 C Chopped Onion3 Garlic Cloves, minced5 C FF Chicken Broth1 C Dried Lentils1/2 C Chopped Carrot2 Bay Leaves3 C Chopped Spinach or Swiss Chard1.5 C Chopped potato1 C Chopped Smoked Ham1 14.5 oz can diced tomatoes, drained1 Tsp dried basil1/2 Tsp dried thyme1/2 Tsp black pepper
Makes 4 1&3/4 cup servings
Heat oil in dutch oven over med-high heat. Add onion and garlic, saute 5 minutes. Add broth, lentils, carrot and bay leaves, bring to a boil, partially cover, reduce heat, simmer 20 minutes. Add spinach or swiss chard, potato, ham, bring to a boil, reduce heat and simmer 15 minutes. Stir in tomatoes, basil, thyme and pepper and simmer 10 minutes. Discard bay leaves.
