Veggie and Cream Cheese Omelet

Ingredients
1 cup vegetables of your choice1 egg plus 1 egg white2 tbsp. water Sea salt and pepper to taste2 tbsp. cream cheeseAssorted fresh herbs, optional1 slice whole grain bread1 tsp. butter (optional)
Directions
Spray pan with cooking spray. Add vegetables and sauté until softened, about 4 min. depending on vegetables. Meanwhile, whisk eggs, water, salt, and pepper together in a bowl. Return pan with vegetables to the stove top and pour egg mixture over vegetables. Cook until omelet is set, about 3 min. Add cream cheese and fold into omelet. Garnish with fresh herbs. Serve with bread and butter.

    Was craving an omelet for some reason which is unusal for me since I don't like omelets. I used two whole eggs and 1.5 oz of cream cheese. Was very good, satisfying, and would make again. Thanks for a good "go to" recipe. - 10/7/10

    Easy to make and very delicious! My omelette was almost overloaded with veggies so next time I will use maybe 3/4 cup. Also, to help cook the egg on top so the bottom won't burn broil for about 2 min. - 6/9/09
