Chicken Cassarole

Ingredients
I chicken breast (diced and cooked in pan with non stick spray)2 cans cream of ____ soup ( I used mushroom in the calorie calculations-but i used celery in the actual cassarole)1 pkg frozen mixed veggies2 cups skim milk3 cups noodles, cooked, drained2 cups shredded cheese
Directions
Pre cook chicken, veggies and noodles. Combine all ingredients (except cheese)in 9x 12 cassarole dish. Cover mixture with shredded cheese. Bake in over set at 350 degrees for 30 minutes.

(This dish can be prepared ahead then frozen to be baked at a later time. I do this on weekends so that I have something that I can just pull out and cook in a hurry or when I am unispired and tempted to cook an unhealthy meal. My family likes when I add crushed potato chips on top , but that adds more calories, sodium and fat, so I usually add it to one third of the dish for them and I eat it without. Left overs are also without for my lunches and the like.)

    My whole family liked this recipe. It was easy to make. My co-workers even drooled over my leftovers. Only problem was the serving size. I think 12 servings makes the servings too small. I made it 6 servings so I add 2 servings to my nutrition tracker when eating this. - 6/16/09
