Garden Vegetable Soup with Lentils and Grains

Ingredients
1 tbsp. olive oil1 medium carrot, diced1 medium onion, diced1 large celery stalk, diced2 cloves garlic, minced3 cups chicken broth1 tbsp. tomato paste (optional)2 1/2 cups vegetables of your choice1/4 cup brown or mixed rice1/4 cup quinoa1/2 cup dried lentils, any type1/4 tsp. sea salt1/4 tsp. pepper3/4 tsp. dried herbs of your choiceFresh herbs (optional)Saute onions, carrots and celery in olive oil until softened. Add all the remaining ingredients and bring to a boil. Reduce to simmer and cook for about 20 min.
