Dried mushrooms (dried weight), 15gOlive Oil, 2 tbsp Mushrooms, fresh, 225g slicedShiitake Mushrooms, 115g slicedOyster Mushrooms, 115g sliced1 small onion finely choppedGarlic, 3 cloves crushedCoriander powder, 2 tsp Parsley, handful chopped
Soak the dried mushrooms for 20 mins in just enough hot water to cover. Then drain and gently squeeze to remove excess moisture.
In saucepan, heat oil and add onions and mushrooms, including the soaked mushrooms. Stir well, cover and cook gently for 5 mins.
Stir in the garlic, coriander and seasoning. Cook for another 5 mins until mushrooms are tender and much of the liquor has been reduced.
Mix in the parsley, allow to cool slightly and serve.
