1# ground veal2 links each hot & sweet italian sausage, sliced12 shadybrook farms turkey meatballs3 slices bacon1 large onion, chopped2 medium carrots, sliced2 large baby zucchini, sliced1 tBsp smart balance oil6 cloves garlic, minced2 28 oz. cans diced tomato3 28 oz. cans crushed tomato1 can tomato paste5 oz. red wine2 tBsp balsamic vinegar2 tBsp basil1tBsp oregano24 oz hodgson mill tri color spirals (wheat)
makes 12 servings
cook bacon in stock pot, drain grease and blot. dice and save aside. add ground veal to same pot, brown and drain liquid. add in chopped sausages, saute 5-10 min. add onion and garlic, saute 5 min. add zucchini and carrot, saute 5 min. add remaining ingredients and chopped bacon, simmer 3 hours. serve over 2 oz. pasta and top with parmesan.
