Bean & Corn Turkitos

1lb ground turkey1 cup onion, chopped1 cup green pepper, chopped1 tbsp olive oil1 can black beans, rinsed1 can petite diced tomatoes, undrained1/2 box of frozen corn, thawed1/4 cup canned jalapenos, finely chopped1 packet taco seasoningWhole wheat tortillasNonfat sour cream
1. Saute onion and pepper in olive oil over med-high heat until slightly tender, but not soft. Don't let the pepper lose its color.
2. Add turkey and cook until browned.
3. Add tomatoes, beans, corn and jalapenos.
4. Sprinkle taco seasoning evenly over turkey mixture and add a little less than 1/4 cup water.
5. Lower heat and cover for 5 minutes.
Serve with whole wheat tortilla and low-fat sour cream.
